Easy Peasy Spring Pea Salad!

Hello m'dears! If there is one thing that the sunshine inspires in me, it's healthy eating! Suddenly the idea of a salad supper sounds more appealing than a hearty stew! And with all the seasonal veg winking temptingly in the grocers isle, I thought I'd try out some new recipes, in the hope that they will become firm family favourites. Today's pick of the crop, is a 'Spring Pea Salad'. We've tried and tested it, and it went down a treat, so I thought I'd share it with all of you.

I fondly remember the joy I used to get from squishing open pea pods as a child, and picking away at the 'pearls' inside the shell. There is something quite magical about those sweet little green gems! I think for me, it had something to do with the fact that my favourite Ladybird book was 'The Princess and the Pea'! There is also something very special about the warm feeling of togetherness, when everyone is sat around the kitchen table shelling peas. My children aren't overly enthusiastic about cooked, frozen peas, but somehow the unspoilt, earthy nuttiness of fresh peas go down a treat.


































Spring Pea Garden Salad

You will need:

  • 1 cup fresh peas, shelled
  • 1 bunch radishes, finely sliced
  • lettuce/salad base.....we went for a mix of baby spinach, rocket and herb lettuce
  • a couple of boiled eggs, sliced
  • feta or goats cheese
For the dressing, combine in a jar by vigorously shaking together the following:

  • About 190 ml natural Greek yogurt
  • 2 tblsp Mayonnaise
  • 1tbsp chopped Dill
  • 1 tsp white wine vinegar
  • 1tsp Dijon mustard
Combine all the fresh ingredients, and top with the eggs and crumbled cheese. Spoon over the dressing to taste, and save the rest for another time!

New Beginnings!



Hello my lovelies! It's been a long old while since I picked up my blogging pen over here, but it's not that I've been idle. Oh no sirree! I have been spinning words on a new blog over at 'Every Little Vintage Thing'. I have intended to start a new blog for a while, separating my love of sewing, and my love for all things vintage. I am still wondering if I've done the right thing, but not everyone who likes sewing necessarily likes vintage styling! I also get bored very easily...the curse of the creative mind I'm told...So, I fancied something new and different. Any thoughts on this? Suggestions on a post card pleas! But, do pop over and take a look. I'd love to know what you think. Hope all is well in your valley!
